After asking Gippity for a High-Fiber White Bread recipe, I needed something to do with it besides making avocado toast, so I asked for a sandwich.

I hoped for something more creative than “grilled chicken,” but I should have been more specific in my prompt. This has been a theme with Gippity: I ask for something and get exactly what I asked for, but not necessarily what I wanted.

I only have a few photos of the process (it’s literally just a sandwich), but here’s the mandatory picture of the cross-section.

One step I wasn’t sure about was the honey-mustard spread. I’ve always used honey mustard straight up, but Gippity suggested mixing it with mayo. To prevent the spread from being excessively cloying, I opted for a sharp honey mustard and a light mayo, which worked out great.

Speaking of themes, every time Gippity gives me a simple, straightforward recipe, it turns out frikkin’ great. This sandwich was no exception.

The honey-mustard spread was a great idea, but I’m glad I chose a light mayo; along with the avocado, too much fat would have made the sandwich too rich.

I gave the High-Fiber White Bread a mediocre review (even though my family loved it) because it was a little too brown and heavy for “White Bread,” but it was perfect for this sandwich.

And boy, was it filling. I had to take a nap after eating it.
